Avocado Salad with Orange Ginger Sauce

Quick, colorful and healthful appetizer.

1 avocado
6 cherry tomatoes.
6 macadamia nuts
1 tablespoon chopped onion
1 teaspoon minced garlic
1 teaspoon grated ginger
2 tablespoon orange juice
½ tablespoon soy sauce
Remove the peel and core of avocado, cut into quarters. Chop tomatoes into halves or quarters. Chop macadamia nuts into small bits. Spread some lettuce or spinach on a plate (optional) Mix avocado, tomato and macadamia nuts in a bowl. Place on top of spinach. Orange ginger sauce: Mix onion, garlic, ginger, orange juice and soy sauce. Note: If you used salted macadamia nuts, reduce the amount of soy sauce.
