Basil Garlic Trumpet Mushroom

This is a vegetarian modification of Taiwanese dish “Three Cups Chicken,” which uses equal portions of sesame oil, wine and soy sauce (thus “three cups“). Basil and Garlic are a big part of this dish too.

1/2 pound trumpet mushroom
3 garlic cloves, peeled and crushed
2 slices ginger
1 stalk green onion
1 tbsp. sesame oil
1 tbsp. soy sauce
1 tbsp. rice wine
1/4 cup water
¼ cup fresh basil leaves

Cut trumpet mushroom into rounds and bite-size pieces.
Cut green onion into 1 to 2-inch segments.
Heat sesame oil in wok, add garlic, ginger, green onions and stir fry until fragrant.
Add mushroom and stir to mix.
Add wine, soy sauce and water. Stir in basil leaves. (You can use dried basil too)
Cover and simmer for 3 to 5 minutes.
