This Beet, Apple, & Goat Cheese Salad is not only delicious, but pretty and healthy.
3 beets
4 oz. goat cheese
1 Granny Smith Apple
1 head of Romaine Lettuce
2 cups of baby Kale
12 asparagus spears
1/2 cup olive oil
1 clove garlic
1 Tbs. fresh Thyme or dried
1 Tbs. apple juice concentrate
1/3 cup White Balsamic
coarse sea salt
coarse ground black pepper

Start by peeling the beets and cut off the tops and rub them with olive oil and wrapped them in tinfoil. Place beets in the oven at 375* for about 40 minutes. Remove from oven and let them cool.
