Caribbean Style Corn On The Cob

Roasted corn on the cob coated with homemade aioli, paprika, Parmesan cheese and fresh parsley. This is a recipe recreation of the Fire Roasted Corn in a Caribbean Latino restaurant called Paseo in Key West, Florida.

6 ears of corn
1 large egg yolk
1 tsp Dijon mustard
3/4 cup extra virgin olive oil
1 clove garlic
1 tsp sea salt
1/2 tsp ground black pepper
1 tbsp lemon juice
3 tbsps fresh parsley, finely chopped, divided
Paprika and grated Parmesan cheese for serving
