Carrot Cake with Cream Cheese Frosting

Our mom’s carrot cake was always a favorite when we were growing up. It is moist and delicious, and the frosting is just heavenly. Years ago, I bought a boxed carrot cake mix thinking it would be the same. I will never make that mistake again! I have also tried carrot cakes from several different stores and NOTHING comes close to this carrot cake.

Carrot Cake:
1 1/2 cup flour
1 cup sugar
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
2/3 cup oil
2 eggs
1 cup shredded carrots
1/2 cup pineapple
1 tsp. vanilla

Frosting:
2 Tbsp. butter
3 oz. cream cheese
2 cups powder sugar
2 tsp. vanilla
