Delicious Cheese Enchiladas with Chili Gravy is a nice change from regular red enchilada sauce.

1.5 pounds ground beef
1 medium onion – chopped and divided into two pi
3 tablespoons chili powder
1 tablespoon paprika
1 tablespoon ground cumin
2 teaspoons garlic – minced
1/2 teaspoon salt
1/2 teaspoon black pepper
dash of cayenne powder
dash of garlic powder
8 cups beef broth (I used Better Than Base Beef – one big teaspoonful per four cups of water)
1 – 28 ounce can whole tomatoes
1/3 cup water
1/3 cup corn starch
6 cups shredded Mexican cheese blend or taco cheese
20-25 corn tortillas
