What is Chilaquiles you ask? While they don’t look like it I think they taste just like cheese enchiladas. I prefer to describe them as a NEW way of making nachos.

•1/4 cup vegetable oil
•8 small corn tortillas
•1 cup mild enchilada sauce
•2 ounces whole green chilies
•1 to 1-1/2 cups Mexican cheese blend, shredded
