Chipotle Seasoned Rice

Chipotle Seasoned Rice is a great easy Mexican side dish and it smells amazing while it cooks away on the stove

1 cup uncooked rice
2 ¼ cup vegetable broth
1 teaspoon paprika
½ teaspoon chipotle powder
1 teaspoon garlic powder
1/4 teaspoon cumin
1/2 teaspoon salt
1 tablespoon olive oil, or light tasting oil of your choice
Combine all ingredients in a medium pot, and place over high heat. Cover, bring to a boil, and reduce heat to low, simmering for twenty minutes. Top with chives or cilantro if desired.
