Classic Lemon Chicken Piccata

Lemon Chicken Piccata is one of those meals that reminds me of when I was little. I decided to try it at a restaurant when I was around 8 or 9 and my mom tried and tried to change my mind, but I refused. The first taste was heaven. The light citrus and the salty bite of the capers were the perfect compliment to the tender chicken. Now I have to admit, that my kids weren’t having any of the sauce, but they at least tried it.

1 1/2 lbs chicken breast cutlets
1 T olive oil
2 T butter
1/4 c chopped shallots
1 T minced garlic
3/4 c white wine
1/2 c chicken stock
1 t all-purpose flour
2 T lemon juice
1/3 t lemon zest
2 T capers, rinsed well
2 T flat parsley, chopped
salt and pepper to taste
