Cucumber Pasta

Got too much cucumber at home? Make this easy and quick side dish and use them up!

2 cucumber
1 tablespoon olive oil
1 garlic clove, minced
2 tablespoon grated Parmesan cheese
1 tablespoon fresh basil
Shred the cucumber into thin strings. Put the cucumber in a pot of boiling water, cook 1 minute, then drain. Heat olive oil in a pan, add garlic and sauté for 1 minute. Add cucumber, Parmesan and basil, mix well and turn off heat. (If you don’t have fresh basil, substitute with 1 teaspoon dried basil and sauté with garlic instead of adding it later.) Serve immediately.
