Dill Fish Cakes with Avocado Salad

One of our absolute favorites, this meal is comprised of great complimentary tastes that are a joy.

2 pounds tilapia fillets, skinless and boneless
¼ cup finely chopped fresh green onions
2 cups Panko bread crumbs, divided
2 tablespoons fresh lemon juice (1 lemon)
1 egg, lightly beaten
1 tablespoon Dijon mustard
½ teaspoon Tabasco
3 tablespoons finely chopped fresh dill
3 tablespoons olive oil, divided
2 garlic cloves, minced (1 teaspoon minced garlic)
1 orange bell pepper, seeds and membranes removed
2 Roma tomatoes, chopped
1 small cucumber, seeds removed, chopped
¼ cup red onion, sliced very thinly
1 avocado, peeled, pitted and sliced
1 head butter lettuce, leaves removed, washed and drained
Sea salt or kosher salt, to taste
Fresh ground black pepper, to taste
