Easy Fish Tacos with Corn Salsa

This easy to make recipe is full of flavor and healthy ingredients that is nice change from traditional fish tacos.

ΒΌ cup chopped red onions
2 jalapenos, seeds and membranes removed, chopped
1 medium red bell pepper, seeds and membranes removed, chopped
1 (15-ounce) can whole kernel corn, drained and rinsed
3 tablespoons chopped fresh cilantro
2 tablespoons fresh lime juice (1 lime)
4 (4-ounce) tilapia fillets, washed and dried with paper towels
1 tablespoon olive oil
8 whole-grain tortillas, taco size
1 head lettuce, shredded
4 tablespoons crumbled Feta cheese
1 cup light sour cream (optional)
Sea salt or kosher salt, to taste
Fresh ground black pepper, to taste
