Easy Peasy Mediterranean Fish Dinner

This is a simple but tasty meal that you can whip up in half an hour. Serve over rice and you have a complete meal.

1 Tablespoon butter
4 tilapia filets (or other white fish)
1 jar Aldi's Artichoke salad (or other brand equivalent)
6 sundried tomatoes chopped
1 densely packed cup fresh spinach, chopped
1 teaspoon crushed garlic
2 Tablespoons capers
Thaw fish if frozen and pat dry. Melt the butter in a sauté pan over medium high heat. Add fish and brown or 2 minutes on each side. Add all the ingredients except the rice. Cover and cook for 5-10 minutes...
