Easy Vegan Paella

Very simple paella. Feel free to add more vegetables.

1 teaspoon olive oil
½ cup red bell pepper, cut into strips.
½ cup chopped onion
1 cup vegetable broth or water
2 garlic cloves, minced.
½ teaspoon saffron
½ cup rice
1 cup broccoli florets
Heat oil in a flat pan, add red bell pepper and onion, sauté over medium heat for 3 minutes. Pour vegetable soup into the pan, add garlic and saffron, stir and turn up the heat to boil. Sprinkle rice evenly in the pan, cover and simmer 10 minutes. Spread the broccoli florets on the rice, cover and cook 8 minutes or until rice is soft. Remove from heat and wait for 5 minutes. Move to serving plate and add salt and pepper or other condiments.
