Gingerbread Latte Cupcakes

Soft and spicy, with a whipped cream frosting, these Gingerbread Latte Cupcakes are everyone\\\\\\\'s favourite festive drink in cupcake form!

For the cupcakes:
1 stick unsalted butter or margarine, at room temperature
1/2 cup light brown sugar
1/4 cup caster sugar
2 large eggs
1/2tsp vanilla extract
1 and 1/2 cups plain flour
2tsp baking powder
Pinch of salt (ONLY if using unsalted butter)
1tsp ground cinnamon
1 and 1/2tsp ground ginger
1/4tsp ground allspice
1/4tsp ground nutmeg
1 shot (30ml/1 fluid oz) very strong, freshly brewed Espresso*
1/3 cup golden syrup
For the frosting:
1 and 1/2 cups heavy cream
1/2 cup icing sugar, sifted
1tsp ground ginger
1/4tsp vanilla extract
