Jack Potato with Natto Filling

Jack potato with a Japanese twist.

2 medium potato, any kind.
2 ounce natto
2 tablespoon chopped green onion
2 tablespoon chopped bell pepper, any color.
Preheat the oven to 375 degrees Fahrenheit. Keep the potatoes skin on, bake for about 40 minutes (bigger potatoes take longer). Natto Filling: Mix natto, seasonings in the pack (or use a little soy sauce and Dijon mustard), onion and bell pepper. Let the potato cool before making a cross cut. You can scoop out some flesh to make more space for the filling. Fill the opening of the potatoes with natto filling. Return to the oven and bake for 15 more minutes.
