Kale Couscous Salad

A simple detoxifying salad – couscous and kale mixed with a lemon vinaigrette make for a flavorful combination.

5 cups kale
1/3 cup couscous + 1/2 cup water
1 teaspoon olive oil
1 mango
1 small red pepper
1 can black beans
1/4 cup sunflower seeds
Dressing
3 tablespoons olive oil
1/4 cup freshly squeezed lemon juice
1 and 1/2 tablespoons apple cider vinegar
3/4 tablespoon honey
1 teaspoon dijon
Salt and pepper, to taste
