Lentil and Sweet Potato Tacos

These lentil tacos are easy to prepare, vegetarian friendly, and very healthy. They are a tasty recipe that your whole family will enjoy.

For the Lentils
2 cups dry lentils
2 cups chicken or vegetable broth
1 1/2 tablespoon taco seasoning, or you can make your own!
2 ounces yellow onion, chopped
2 cloves of garlic, minced
1 small sweet potato, cubed
1/4 teaspoon salt and pepper
1/2 tablespoon olive oil

For the Guacamole
1 avocado
2 ounces chopped tomato
1 tablespoon of lemon juice
1/4 teaspoon salt and pepper
1/4 teaspoon red pepper flakes
1 teaspoon of guacamole seasoning, optional
1 ounce cilantro
