A lighter version of chicken enchiladas.

1 1/2 cups shredded rotissiere chicken (or any shredded chicken -- season as desired)
1 1/2 - 2 cups Kraft mozzarella cheese
10 corn tortillas
3/4 cup lite coconut milk cream** (or sour cream)
1 small can of green chile enchilada sauce
About 1 1/2 cups fresh spinach, washed and dried
