Loofah with a twist, something different from what I was used to as a child - always loofah with ginger. I wanted some change, and a colorful change.

2 cups mushroom
¾ cup chopped red bell pepper
2 tablespoon red miso paste
¼ cup water

You can use any kind of mushroom. I tried shimeji which goes well with loofah, but feel free to experiment.
Trim both ends of the loofah, peel and cut into cylinders about 1 to 2 inch tall.
