Maple Bourbon Sweet Potato Casserole with Sweet and Spicy Bacon Pecans

Warm roasted sweet potatoes sweetened with maple syrup and spiked with bourbon. Then topped with sweet and spicy pecan and smokey bacon. Amazing.

4 medium sweet potatoes
? c. maple syrup *
2 teaspoons vanilla extract
1 teaspoon cinnamon
2 Tbsp. milk
¼ cup butter, melted
2 eggs, lightly beaten
2 tablespoons bourbon (This is optional but recommended)
Sweet and Spicy Candied Pecans and Bacon Topping:
6 slices thick cut bacon, chopped (a smoked bacon is great here!)
2 Tbsp. brown sugar
? cup all-purpose flour
1½ cups raw pecans, roughly chopped
? cup salted butter, melted
½-1 teaspoon cayenne pepper
1 tsp. sage (2 Tbsp if you got the fresh stuff)
Salt and pepper to taste
