Mashed Cauliflower with Mushroom

This can be made into a full meal. Just serve with some leafy greens.

1/2 cauliflower
1 small potato
1 tablespoon miso paste
2 shiitake mushroom
2 trumpet mushroom
2 garlic cloves, sliced.
1 tablespoon olive oil
½ tablespoon soy sauce
2 cups water
Peel potato, cut cauliflower and potato into small chunks. Put potato chunks in a pot, cover with water (if 2 cups not enough add more). Boil, then turn to simmer. Add miso paste and cook for 15 minutes. Add cauliflower and cook 5 more minutes. Drain. Cut shiitake mushroom into small pieces. Cut the trumpet mushroom into two halves or smaller. In a saucepan, heat olive oil, sauté garlic until fragrant, then add the mushrooms. After 1 minute, add soy sauce and continue to sauté. Add a little water if too dry. Cook until mushrooms are soft. Mash the cauliflower and potato with a spoon or with blender. Pour into serving bowls and top with mushrooms.
