If you are on a Mediterranean diet, this salad is perfect for you. A very simple Mediterranean Tomato Salad with Blueberry Vinaigrette!

- 1 Beefsteak Tomato
- 1 Orange Tomato
- 1 Green Tomato or Tomatillo
- 1/2 Cup of Feta Cheese (Vegan Alternative - Extra Firm Tofu Soaked Overnight in Lemon Juice and Garlic. Or Extra Firm Tofu Soaked Overnight in Saltwater or Miso)
- 1/2 Cup of black or Kalamata Olives
- 1/2 Cup of Chopped Walnuts (Optional)
- 2 Leaves of Mint (Optional)
- 1 Orange Tomato
- 1 Green Tomato or Tomatillo
- 1/2 Cup of Feta Cheese (Vegan Alternative - Extra Firm Tofu Soaked Overnight in Lemon Juice and Garlic. Or Extra Firm Tofu Soaked Overnight in Saltwater or Miso)
- 1/2 Cup of black or Kalamata Olives
- 1/2 Cup of Chopped Walnuts (Optional)
- 2 Leaves of Mint (Optional)
- Chop the tomatoes into wedges
- Add the remaining ingredients
