Mini Stuffed Tomatoes

Easy appetizer with simple ingredients.

16 cherry tomatoes
1/4 cup raw almonds
1/4 red bell pepper
1 tablespoon peanut butter
1 minced garlic clove
1 teaspoon minced onion
1/2 tablespoon fresh lemon juice
Trim off the top of the tomatoes, and then scoop out the middle of the tomatoes to make little cups. (Save the flesh for other dishes, such as tomato sauce or salad.) If the tomatoes don’t stand still, you can trim the bottoms to make them flat. Put almond, red bell pepper, peanut butter, garlic and onion into food processor and mix. Finally, add the lemon juice and pulse for a few seconds. Put the almond paste into the tomato “cups” and serve in a plate.
