These 3 ingredient apricot cashew no bake energy bites are a quick and easy, healthy snack for busy days! Gluten free and paleo and vegan friendly too!

1/4 Cup Unsweetened coconut flakes (optional)
1 Cup Roasted salted cashews (140g)
2 Cups Dried apricots (300g)
2 tsp Coconut oil, melted
