1 1/2 cups long grain rice ( white )
1/4 cup oil
1/4 cup onion ( chopped )
1/2 zucchini squash ( chopped )
1/2 summer squash ( yellow, chopped )
1/2 bell peppers ( red or orange, chopped )
1 black beans ( can, rinsed and drained )
1 cup frozen yellow corn ( or fresh )
2 roma tomatoes ( chopped and divided )
2 clove(s) garlic ( minced )
2 bouillon cubes ( tomato )
1/4 cup salsa ( your favorite )
2 cups chicken broth
1 1/2 cups water
to taste salt
1/2 cup shredded cheddar cheese
1 avocado ( chopped )
1/3 cup fresh cilantro ( chopped leaves )
