Pasta with Eggplant Sauce

Use the eggplant sauce on any kind of noodles or pasta. Skip the pasta and use the eggplant sauce as a dip.

4 oz. pasta
1 eggplant
ΒΌ cup raw almond
1/2 cup chopped tomato
2 garlic cloves
1 teaspoon dried basil

Soak almond for 2 hours (optional).
Cook pasta or noodles according to direction on package.
Preheat oven to 400 degrees Fahrenheit.
Using a fork, poke the eggplant a few times. Bake for 30 minutes or until soft. Remove from oven to cool.
Mix almond, tomatoes and garlic in a food processor.
Peeled eggplant, and then put into food processor with basil. Blend with other ingredients. Season with salt and blend again. If too thick, add some hot water and blend again.
Serve with lettuce or steamed vegetables, and garnish with additional chopped tomatoes.
