A very fluffy and moist muffin that are just to die for!! Come on try them now, you won't regret it.:D

1/3 cup vegetable oil
1/2 cup sugar, or 1/3 cup if you want less sugar
1 egg, room temperature
1 1/4 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1 cup peaches, chopped into cubes ( I used the canned peaches with syrup)
2 tablespoons peach juice, from the can of peaches(the syrup)
2 tablespoons milk, at room temperature
1 tablespoon all-purpose flour
Preheat oven to 350F. Spray 12 tins from the muffin pan, with baking/cooking spray In a medium bowl; combine all dry ingredients. Set aside. In a small bowl combine the milk with the syrup, and set aside as well. In the bowl of the mixer; mix together vegetable oil and sugar until combined. Beat in egg, scraping bowl as needed. Add in 1/3 of flour mixture; then the milk mixture, following with the rest of the flour. Mix until just combined. In another bowl mix together the peaches and 1 tablespoon flour very well; fold that mixture into the batter until combined. Fill muffin tins 2/3 full (try to get them as even as possible) Bake 17-20 minutes, until pick inserted into the center of one muffin comes out clean. Cool completely (or they will tear apart). Enjoy!!!!! :D
