A homemade, Amish recipe for layered Pumpkin Spice Cake. Topped with cream cheese frosting and chopped nuts.

½ cup shortening (or butter)

1¼ cups granulated sugar
2 eggs, beaten
2¼ cups sifted cake flour
2½ teaspoons baking powder
½ teaspoon baking soda
1 teaspoon salt
2 teaspoons cinnamon
1 teaspoon pumpkin pie spice*
1 cup solid-pack pumpkin
¾ cup milk
For the frosting:
12 ounces cream cheese, softened
1 cup (2 sticks) plus 2 tablespoons butter, softened
5¼ cups powdered sugar (confectioner\'s sugar)
1½ tablespoons vanilla extract
1 cup chopped pecans, optional, for topping
