Quick Mini Tomato Pizza

No time to make pizza dough? Use toast bread for the crust, and make a quick filling from fresh tomatoes!

2 toast bread
1 tablespoon olive oil
½ onion, chopped
1 garlic clove, minced
½ teaspoon dried basil
1 cup chopped tomato
1/8 teaspoon salt
1/8 teaspoon ground black pepper
5 cherry tomatoes
Use a big round cookie cutter to cut toast bread into 2 round slices. To make filling: Heat oil, sauté onion and garlic until fragrant, then add basil and tomato, cover and simmer for about 15 minutes, until the tomato chunks become a sticky paste. Add salt and pepper to taste and mix well. Cut cherry tomatoes into round slices. Put tomato filling on top of the bread, spread to cover the entire surface. Add tomato slices all over, and the pizza is ready.
