Roasted Garlic & Red Skin Potato Salad is a delicious twist on creamy potato salad recipe with roasted garlic and bacon.

2 lb red potatoes
½ lb. bacon
1 large sweet yellow onion diced
¼ c. red bell pepper diced
2 stalks celery finely diced
1 bunch green onions chopped
6 hard boiled eggs chopped
1 c. mayonnaise
? c. Dijon
2 Tbsp. champagne vinegar (can substitute red wine vinegar)
2 tsp salt
½ tsp pepper
4 heads roasted garlic, mashed
½ lb. bacon
