Sashi's Juicy chicken roast

Boneless Chicken - 500 gms
Sliced Onions - 3
Sliced green chilly - 3
Curry leaves - few
Salt - 1 tsp
Turmeric Powder - 1/2 tsp
Chilly Powder - 1 tsp
Coriander Powder - 1 tsp
Rice flour - 1 tsp
Corn flour - 1 tsp
Gram Flour - 1 tsp
Sunflower or normal oil for frying
coconut oil - 2 tsp
Ginger - Garlic Paste - 1 1/2 tsp
Garam Masala - 1 tsp
Egg - 1
Marination: Add 1 tsp of salt, 1 tsp of chili powder, 1/2 tsp turmeric powder, 1 1/2 tsp of ginger garlic paste to the washed and cleaned chicken and mix it well. After 5 minutes add rice flour, corn flour and the gram flour to this mixture. Leave it aside for 45 minutes at room temperature. Frying: Add enough oil to a pot to deep fry the marinated chicken and have it 90% fried. Drain it from the oil and keep it aside. To a fresh pan, add 2 - 3 tsp of coconut oil (do not use any other oil) Add 5-6 ginger julienne and saute this for 30 seconds. Add 2 green chilies to it and saute it for another 30 seconds. To this add the sliced onions and fry for 30 - 45 seconds and then add curry leaves and saute for 5 more seconds. To this add the fried chicken and cook for 2- 3 minutes at normal flame. Now the dish is ready to serve.
