Simple Lemon Jello

Lemon is never too old-fashioned.

1 tablespoon agar agar
1¼ cup water
2 tablespoon freshly squeezed lemon juice
2½ tablespoon honey
Mix water, lemon juice and honey, then add agar agar; put in a pot and stir over low heat until well mixed and sticky, about 3 to 5 minutes. Adjust the amount of water for desired texture. More water makes softer jello. If the jello is too soft, add more agar agar. (Each brand is different, so you have to test it. If you want to be safe, make a small amount of jello the first time.) Pour the liquid into a container. Add lemon zest, cacao nibs or fruit jams for extra flavor and pretty look. Refrigerate until set.
