Southwestern Nachos with Chipotle Sauce ~ Tortilla Chips Loaded with Corn, Black Beans, Red Pepper, Tomatoes, Black Olives, Cilantro and Green Olives! Topped off with a spicy Chipotle Sauce! The perfect Vegetarian Appetizer!

Nachos
1 (18 oz) Bag Tortilla Chips
1/2 c. corn
1 (15 oz) can black beans, rinsed
1 tomato, diced
1/2 c. diced red pepper
1/4 c. diced green onion
2 Tbsp chopped cilantro
Chipotle Sauce
1 Chipotle in Adobo Sauce
1/4 c. unsweetened Silk Cashew Milk
2/3 c. mayonnaise
2 cloves garlic, minced
Spread tortillas out on baking sheet or large platter. Top with the rest of ingredients. To make the Chipotle sauce mix all ingredients in blender container. Puree until smooth. Drizzle over nachos.
