Spanish Rice

Simple rice that pairs perfectly with Creamy Chicken Enchilada Casserole. We also like to make it with carnitas tacos, fish tacos, or any other Mexican food really!

2 Tbsp olive oil
2 cups white rice (Calrose is our favorite)
1 cup white or yellow onion, chopped
3-4 cloves garlic, minced
1 14 ounce can tomato sauce
4 cups chicken broth
1 tsp kosher salt
1/4 tsp onion powder
1/4 tsp black pepper
1/8 tsp cumin
1/4 cup cilantro, chopped
1) Warm oil over medium to medium high heat in heavy sauce pan with tight fitting lid 2) Add onion and saute for 1 minute 3) Add rice and saute until light golden brown 4) Add minced garlic and cook until rice is a slightly darker golden brown (be careful not to let the onion or garlic start to burn) 5) Stir in tomato sauce, chicken broth, spices, salt and pepper 6) Bring to a rolling boil 7) Reduce heat to medium-low 8) Cover and cook for 20 minutes 9) Remove from heat and leave covered for 10 additional minutes 10) Add cilantro and fluff with a fork
