Spinach Soup with Vegetables

A colorful spinach soup.

2 cups vegetable broth
½ small onion, chopped.
½ small carrot, sliced or shredded.
2 cups baby spinach, roughly chopped
2 tablespoon cooked corn kernels
1/8 teaspoon salt
Put vegetable broth, onion and carrot into a pot, boil then turn to simmer. Cover and cook for about 10 minutes or until vegetables become soft. Stir in spinach and corn, cook for one minute then turn off the heat. Add salt to taste and garnish with additional spinach (optional).
