2-3 cups sweet potatoes (peeled and grated)
2 tablespoons ghee (melted)
1 cup prosciutto (cubbed and cooked)
1/4 cup fresh spinach (chopped roughly)
2 tablespoons fresh basil (rolled and sliced)
1/2 cup sundried tomatoes (chopped roughly)
5 Large eggs
1/3 cup full fat coconut milk (or whole30 approved almond milk)
1/2 teaspoon salt
1/8 teaspoon pepper
1 teaspoon italian seasoning
