Thai Red Rice & Green Curry with Potato & Butternut

Being a vegetarian, I am privileged to admire only the vegetarian thai food ;). Their red and green curries are my favorites , which are normally served with a bowl of rice.I had a keen desire to try the same recipe at home with my favorites vegetables and I have almost nailed it yesterday . I recently bought a pack of Red Thai rice which I wanted to try with thai curry and managed to cook this super delicious thai meal yesterday.

Ingredients:
For green curry paste
8 Green chilies
3 Shallots , cut in cubes
7 Cloves Garlic
2 ts Coriander seeds
2 ts Cumin seeds
3 inch piece Lemon grass ( no alternative to this)
2 Ginger pieces(1 inch), The original recipe uses galangal (if you don’t have galangal, use ginger instead in double quantity)
1/4 ts Lemon zest grated
handful of Coriander leaves
Salt & pepper to taste
