The Perfect Whole Wheat Banana Bread

This bread maintains all of the great textures and flavors of a traditional loaf of banana bread, but with a few healthy tweaks. I used a tiny bit of butter for flavor, but otherwise kept the bread moist with the fruit and applesauce. I added a bit of sugar, but really the loaf gets its sweetness from the ripe fruit. And by using a combination of whole wheat flour and all-purpose flour, I avoided that overly-dense or dried-out texture that you often find with 100% whole wheat baked goods. Th

3 or 4 ripe bananas, mashed
2 tablespoons melted butter
¼ cup applesauce
½ cup sugar
1 egg, beaten
1 teaspoon vanilla
1 teaspoon baking soda
¼ teaspoon salt
¾ cup whole wheat flour
