Toasted Coconut Lemon Bars make a quick, tasty low sodium treat anytime. This is a great pot luck or party recipe!

(Cookie base:)
1 Cup flour
1/2 Tsp. baking powder
1/2 tsp. salt
1/2 Cup brown sugar
1/2 tsp. vanilla
2/3 Cup softened coconut oil
1 egg
1/4 Cup rolled oats
Grated rind of 1/2 lemon
(for the frosting)
1 Cup sifted powdered sugar
1 tsp. lemon juice
1/4 tsp. vanilla
2 Tablespoons melted butter
1 Tablespoon milk
1/2 Cup flaked or shredded toasted coconut
