Tomato and Walnut on Pickled Cucumber

Pickled cucumber can be too sour for some people. With the accompaniment of tomato, walnut, and a little sugar, the taste can be easily balanced.

¼ cup chopped tomatoes, with juice.
¼ cup chopped walnut
½ teaspoon sugar
2 pickled cucumber
¼ cup chopped walnut
½ teaspoon sugar
2 pickled cucumber
Slice the cucumber into ¼-inch thick rounds.
Put tomatoes, walnut and sugar in a blender and mix well. Add more walnut for thicker texture. Add more tomato for more liquid.
(You can use honey instead of sugar, and you can heat up the mixture if you don’t want to eat it raw.)
Place the cucumber rounds on a serving plate, and top each with a little walnut mixture.
