Tomato Blueberry Avocado Salad

Use cookie cutters to shape it, or serve it in a small cup.

1 avocado
2 tablespoon chopped onion
2 tablespoon chopped almond
2 teaspoon orange juice
1 blueberry
1 cherry tomato
Peel avocado and remove seeds. Cut into chunks. Mix avocado, onion, almond and orange juice in a food processor. You can have it chunky or smooth. Cut blueberry and cherry tomato into 4 slices each. Prepare two serving plates. Put a cookie cutter on each. Fill the cookie cutter with avocado mixture. For each serving, top with 2 blueberry slices and two tomato slices. (Optional) Garnish with carrot.
