Summertime means cobblers of all kinds. Here is a different recipe for tomato cobbler. The biscuits have Cardamom and Coconut, with cherry tomatoes

For the Biscuits
– 2 cups of all-purpose flour
– 1 cup of heavy cream for the dough
– 1/4 cup of heavy cream for brushing the biscuits
– 1 tsp of kosher salt
– 1/2 cup of sweetened shredded coconut
– 2 tsp of freshly ground cardamom seeds
– 2 tsp of baking powder
– 1 stick of cold unsalted butter
For the tomato filling
– 2 cups of cherry tomatoes
– 1/2 of a red onion
– 1 clove of garlic
– 1 tsp of freshly grated ginger
– 1 tsp of salt
– 1 tsp of cumin seeds
– 1 tsp of olive oil
