Turkey Veggie Skillet Lasagna

Ground turkey, zucchini, squash, spicy tomatoes, and pasta all in the same skillet.

1 Tablespoon extra virgin olive oil
1 lb ground turkey
1 Tablespoon taco seasoning
1 teaspoon dried onion
1 can (14 oz) petite diced tomatoes
1 can (10 oz) RoTel tomatoes & chilies
5 lasagna noodles, broken into ~2 inch pieces
1 small zucchini, diced
1 small yellow squash, diced
shredded Mexican blend cheese, to taste
salt & pepper, to taste
red pepper flakes, to taste (optional)
1 lb ground turkey
1 Tablespoon taco seasoning
1 teaspoon dried onion
1 can (14 oz) petite diced tomatoes
1 can (10 oz) RoTel tomatoes & chilies
5 lasagna noodles, broken into ~2 inch pieces
1 small zucchini, diced
1 small yellow squash, diced
shredded Mexican blend cheese, to taste
salt & pepper, to taste
red pepper flakes, to taste (optional)
Drain the can of tomatoes and RoTel, reserving the liquid into a large liquid measuring cup. Add enough water until it reaches the two cup mark.
Add the tomato water to a large skillet over medium heat....
