Vegetarian Oyster Egg Fry

Use oyster mushroom instead of oysters, for this modified Taiwanese snack dish.

½ pound oyster mushroom
2 tablespoon balsamic vinegar
½ cup water
1 teaspoon cornstarch
2 tablespoon potato starch
¼ cup water
2 eggs, beaten
1 tablespoon olive oil
2 tablespoon chopped green onion
Pick out the top round part of the oyster mushroom (they actually shape like oysters.) Save the rest for other dishes. Mix balsamic vinegar and ½ cup water, soak oyster mushroom in the liquid for 10 minutes Heat oil in a frying pan, fry eggs over low heat for about 1 minute, or until it’s set but not done. Place the oysters on top of the egg and let cook for 2 minutes without stirring. While waiting for the egg, mix cornstarch, potato starch and 1/4 cup water. Pour cornstarch mixture onto the egg, and wait for 1 minute. (You can adjust the starch-water proportion to achieve desired texture.) Remove from heat and sprinkle green onions on top. Serve with ketchup or your favorite sauce, and additional salad greens if you like.
