Walnut Date Kumquat Carrot Cookies

If you used a juicer to make carrot juice, you can use the carrot pulp to make cookies. It’s a good way to recycle it and make a high-fiber snack.

½ cup walnut
¼ cup chopped carrot or pulp from juicing
2 jujube dates
3 kumquat
Preheat the oven to 350 degrees Fahrenheit. Cut the dates open and remove the seeds. Chop the kumquat and remove the seeds. Put all the ingredients in a food processor, blend until mixed and form a dough. Take one spoonful a time, shape into round cookies and place on a baking sheet. Bake for about 15 minutes or until the cookies are dry on the outside. (You can also let the cookies dry naturally and eat them raw.)
