Zucchini Squash Casserole

This recipe is quick and easy on the budget (especially if you have zucchini in your garden!).

8 cups zucchini, diced large
8 oz. diced mush­rooms
1 small onion
2 Tbl. olive oil
8 oz. (2 cups) shred­ded ched­dar cheese
1 can (10.5) oz. con­densed cream of mush­room soup
1/2 cup sour cream
1/2 tsp. salt
1/2 tsp. Emer­ills Orig­i­nal Sea­son­ing
1/2 tsp. Mon­treal Steak Sea­son­ing
1 Tbl. bal­samic vine­gar
1 ½ cups crushed Ritz crack­ers
2 Tbl. but­ter, melted
Pre­heat the oven to 350 degrees. In a large skil­let, saute the zuc­chini, mush­rooms and onion in the olive oil until ten­der crisp. There should still be a bit of crunch, but soft.
