15-minute Chicken Teriyaki Stir-fry

This Chicken Teriyaki Stir-fry is quick & easy to make with your own homemade teriyaki sauce, and filled with crisp rainbow veggies!

Teriyaki sauce:
100 milliliters mirin
50 milliliters Japanese soy sauce
1.5 tablespoons honey
Chicken Teriyaki Stir-fry:
3 tablespoons vegetable oil
500 grams chicken, cut in bite-size pieces
2 red bell peppers, sliced
1 head of broccoli, florets cut in bite-size pieces and stem peeled and sliced
2 carrots, julienned
1 teaspoon ground ginger
0.5 teaspoon salt
For serving:
sesame seeds (optional)

Teriyaki Sauce

  1. Combine the ingredients for the teriyaki sauce in a sauce pan. Let simmer for about 10 minutes, until thickened and a bit sticky.
