2 Minute Frozen Yoghurt

It’s getting warmer, ice-cream season is coming… at least I hope it is. Here in Brussels, Spring has been slow in coming. We’re just one month away from summer and up until yesterday I was still wearing my hat and gloves outside! Now that we’ve finally got some sun, it’s time for a cold sweet treat. This one is my favourite summer snacks. It’s super easy to make, ready in 2 minutes, and it’s healthy too! Check it out:

5 frozen strawberries (unsweetened)
1/2 cup frozen raspberries
1 heaping tsp stevia
125g fat free plain yoghurt (1/2 this amount if you want more of a sorbet than a frozen yoghurt)
1/2 cup frozen raspberries

Put strawberries in microwave safe bowl. Microwave for 15 seconds to defrost slightly.
Add raspberries, stevia, and yoghurt to bowl. Stir to mix together. Blend with stick blender until perfect fro-yo consistency.
NOTE: You can eat the whole thing or stick the rest in the freezer. Will keep there in a sealed container for about a week without getting freezer burn.
