Almond coconut granola clusters

This is a wonderful granola that can be eaten as a bar or crumbles nicely as a cereal or topping. You can add any dried fruit or nuts you like.

1 1/4 cup slivered Almonds
3 cups oats
1/4 cup whole wheat or oat flour
2 tablespoons flax meal
1tsp salt
1/2 tsp vanilla extract
1/2 tsp coconut extract
1/4 cup maple syrup
1/3 cup coconut oil
1/2 cup brown sugar
1/4 cup unsweetened coconut
1/4 pepitas or pumpkin seeds
3 cups oats
1/4 cup whole wheat or oat flour
2 tablespoons flax meal
1tsp salt
1/2 tsp vanilla extract
1/2 tsp coconut extract
1/4 cup maple syrup
1/3 cup coconut oil
1/2 cup brown sugar
1/4 cup unsweetened coconut
1/4 pepitas or pumpkin seeds
Process 3/4 cup slivered almonds in blender until it is a dry flour. Do not over mix.
Combine oats, almond flour, oat flour, remaining slivered almonds, coconut, pepitas. Pour coconut oil over mixture stir and set aside.
Microwave brown sugar, maple syrup until sugar is dissolved. Add extracts. Pour over granola and pat down in a parchment lined 13x9 pan. Bake in a 350 degree over for 30 min or until golden brown.
Cut into bars or crumble. Enjoy!
